Menu Engineering for Hotel Spas: The 60-30-10 Rule That Rebuilt Our Partners' Topline
Guests do not read a spa menu — they scan it. In roughly eleven seconds they anchor on a price point, locate a treatment duration, and pick whichever option feels like it belongs to them. The job of a good menu is to make the right choice feel like the obvious one.
The ratio we design to is 60-30-10. Sixty percent of the menu is the signature core — proven treatments at the price band that most guests will choose. Thirty percent sits above that band as premium rituals that are longer, more branded, more theatrical. The remaining ten percent is the aspirational top end, usually a 2+ hour journey priced to make the 30% feel like value.
The error we see most often is menus built as 85% core and 15% premium — which flattens pricing power — or inverted menus with too many premium options and no clear hero. Both leave margin on the table.
Rebuild the menu around a hero treatment, use decoy pricing to pull guests into it, and treat the top-end rituals as positioning rather than volume. Properties we have menu-engineered this way see average spend per guest rise 18 to 26% within one quarter, without changing a single therapist or treatment protocol.
